Classic and different: 3 recipes with pecan nuts!


Watercress salad, raw ham, fig and walnuts!

Ingredients: 1 bunch of watercress 3 medium figs 200 grams of raw ham ½ cup chopped pecans Method of preparation: The salad makes about 3 servings! Wash the watercress well and distribute on plates, forming a kind of bed for the other ingredients, place the chopped fig in slices and the raw ham slices on top. Sprinkle the chopped walnuts on top and if you like you can season it with a sauce or just olive oil and vinegar.


Pasta with broccoli, nuts and mushrooms! Ingredients:

300 grams of penne pasta ½ cup of chopped mushrooms ½ broccoli ½ cup chopped walnuts ½ cup sour cream or yogurt 1 clove of garlic Method of preparation: Cook the pasta in salted water. In a frying pan add oil and brown the garlic, add all the seasonings you prefer and let it cook a little. Add the cooked broccoli cut into small bouquets and the mushrooms and sauté for a few minutes. Turn off the heat and mix the cream, or yogurt, with the sauce and add it to the already cooked pasta... finally, add the walnuts on top and serve as you prefer.



Cauliflower Meatballs!

Ingredients: 1 small cauliflower ½ cup pecan nuts ¼ cup of almond flour 1 clove of garlic Parsley, chives, salt and pepper to taste Method of preparation: In a container, soak the walnuts for 30 minutes, drain and place them in a food processor along with the garlic and grind. Add the cauliflower, without the stem, and all the other seasonings and grind well. Remove the mixture from the processor and mix the almond flour, with a spoon, shape balls and arrange them in a deeper refractory.


For the sauce: You can use ready-made tomato sauce diluted in a little water if you prefer, or you can reproduce our recipe: Ingredients: 3 very ripe seedless tomatoes 1 small garlic clove Salt, pepper, chives and chopped parsley to taste. Method of preparation: Process the chopped tomatoes and all the other ingredients to a thick sauce. Pour the sauce over the meatballs and bake for a few minutes, or cook over low heat!
