Ingredients 1/2 cup softened unsalted butter 3/4 cup demerara sugar 1 large egg, separated the white and yolk 1 tablespoon of water 1 teaspoon cinnamon powder 1 cup of wheat flour 1/2 cup cocoa powder 1/2 teaspoon of salt 1 cup chopped pecan nuts Pecanobre Nut Paste with Peanut Pecanobre Melted dark chocolate for topping (optional)
Preparation mode: In a mixer, beat the butter and sugar until light and fluffy. Add the egg yolk (saving the white), water and cinnamon powder and mix well. In another bowl mix the dry ingredients and mix the butter cream. In a bowl, beat the egg whites until foamy. Shape the cookie dough into balls, roll in egg whites, roll in chopped walnuts and place on a baking sheet. Using your finger or some utensil, press in the middle of each cookie forming a hole.
Bake in a preheated oven at 180°C for 10 minutes, or until firm. Let the cookies cool for 5 minutes on the baking sheet, heat the nut paste in the microwave until very creamy, then place until the cavity of each cookie is filled and cover with the melted chocolate.
